First Impressions, Atmosphere & Experience
In August 2022, two former special education teachers (Joe Blanchard and Josh Taylir) started a coffee business out of an old 1971 Volkswagen bus named Rosy. They drove Rosy to local events and offered a full-service espresso bar.

Taylir spent his teaching career working with students with special needs and has a history of helping them find employment and support after high school. Sippie Hippie was built deliberately as an inclusive workplace for people of all abilities.
Back in early 2025, I heard about this place through friends from a local church. It was always on my list to visit one day, it just never was worked into my schedule. However, I was scrolling through maps today looking for new places to check out…and I was surprised to find out that Sippie Hippie now has its own brick-n-mortar shop and I had to check it out.
The space includes board games available to play, a gift shop, and a cocktail lounge on the opposite side of the space (shown below…it was set up for a tea party when I visited). The seating area is mostly traditional tables and chairs, with a couch and assorted local artwork adorning the walls. There’s also an outdoor patio on the side of the cafe, where you can enjoy your drinks with Rosy if she’s not at another event!
Austin’s Choice
When I visited, I just wanted something simple. So I ordered a single shot of espresso. This was the first coffee shop that asked me if I wanted ice with that shot (probably due to the scorching 90 degree temperatures outside). I’m always down for a new adventure, so I agreed. It was worth the try but I think I’d rather stick to iced lattes!
